Whether you enjoy watching football or not, the Super Bowl is a great American pastime. Super Bowl 2023 will be no different. Super Bowl Sunday is filled with gatherings, games, and grub. How can you keep the tradition of putting yummy Super Bowl foods on the table without suffering the halftime crash? Here are five delicious Super Bowl snacks your guests won’t know are nutritious.
Loaded Potato Skins
Potatoes contain abundant amounts of vitamin C, B6, and potassium. For an even greater nutrition punch, load them up with plain Greek yogurt for added protein, diced tomatoes and green onion for extra fiber, and some diced ham and cheddar cheese for flavor. Cut your potatoes into ½-inch slices. Toss your slices in olive oil and bake them at 400 degrees for 13-15 minutes on each side. Top with optional ham and cheddar cheese and melt in the oven for 2-3 minutes. Top with a dollop of yogurt, sprinkle your veggies and serve.
Cauliflower Bites
This recipe is a satisfying plant-based alternative to boneless chicken wings. Cut your head of cauliflower into nugget-sized pieces, and coat in flour. Next, dip the cauli bites in beaten eggs, then panko until fully coated. Air fry at 400 degrees for 7 minutes, flipping/shaking halfway through. When they are done, toss in your favorite homemade or store-bought sauces. Return to the air fryer or broiler for two minutes to crisp up, and enjoy!
Nacho Average Guac
Jazz up this simple dish with added veggies for a filling and savory dip on your spread. Mash 3-4 large avocados and add 1 ½ cups equal parts diced tomatoes, red onion, and green bell pepper. Flavor with 1-2 cloves of minced garlic, one bunch of minced cilantro, juice from one lime, and salt and pepper to taste. Get to dipping with some crunchy veggies or your favorite tortilla chips.
Classic Hummus
A tasty dish made from blended chickpeas is the perfect dip to balance your snack table. Blend one can of strained chickpeas, ½ cup of tahini, ¼ cup olive oil, the juice of one lemon, two garlic cloves, one teaspoon of cumin, and ½ teaspoon salt for a velvety smooth hummus. Serve with cucumber slices or a warm pita.
Bunless Burger Kabobs
This deconstructed take on the classic cheeseburger will have your guests both wowed and satisfied. Mix one lb. lean ground beef or turkey, ½ cup of breadcrumbs, two cloves garlic, one tablespoon each of Worcestershire and yellow mustard, and a dash of salt and pepper. Form into 1-inch meatballs and bake on a baking sheet at 350 degrees for 30 minutes. When done, skewer your burgers with cheese, pickles, cherry tomatoes, lettuce, and anything else you’d like.
